While the head and hands will be vinyl - you have a choice of two different types of body - one is referred to as Cortex and the other as Vinyl. Both body types are pre-built.
Knit beanie is awesome - you can wear it with a slouch at the back or use your fingers to tuck in the slouch behind the label. Wearing the beanie showing the fringe as you can see in the photos makes Smart Doll look even cuter. Goes particularly well with the Hoodie Knit Coat.
Do note that the color is between beige and gray so I'm calling it "beige-ish" ;-)

Fabrics naturally age over time as part of their normal behavior.
Lighter colors (such as white) tend to show yellowing more clearly, while darker fabrics may fade over time depending on use and washing. These are natural characteristics of the materials.
